What We Love. The Winery
Tucked away up in North Boulder lies a small winery making a big impact in the beverage market. What We Love The Winery is “Colorado’s Craft Winery,” not only producing fine wines, but pioneering an innovative flagship line of wine based originals called the Decadent Saints.
The scientist behind the wines—quite literally—is owner and degreed enologist Michael Hasler. With over three decades of experience, he’s worked in various parts of the world, including California, Australia, France and New Zealand, and produced gold and trophy winning wines throughout. Previously, Hasler was owner, designer and builder of Wanaka Lake House, a super-luxury accommodation on the shores of Lake Wanaka in New Zealand. He co-owns What We Love The Winery with his wife, Carolee Corey, who assists with all the organizational and vision concepts.
The Winery rotates through a range of elegant and complex varietal wines. The 2013 Chardonnay, for example, is fermented and aged in a blend of French and American oak for seven months. While the Petite Sirah is a rich, full-bodied red with dense aromatics of plum spices and brambles, and the 2013 Orange Muscat exhibits citrus blossom, ylang ylang and frankincense.
Most excitingly, the company is also carving out its own space inside the wine industry with something absolutely new—the Decadent Saints, award-winning craft concentrates made to be diluted from a wine base with real fruit, fresh herbs and spices. The catapult and inspiration behind opening What We Love is an original 20.5 percent ABV liqueur called Decadent Saint Rocky Mountain Rescue. A delicious eclectic liqueur involving dark chocolate, decaf coffee, berries and spices to create a luxurious, truly rich flavor. Designed to be diluted and served hot as a mulled wine or served straight as a Black or White Russian (with cream); keep in the freezer as impeccable ice-cream topping or use as a steak glaze!
What We Love’s sangria concentrates are unlike any other. The award-winning Decadent Saint White Sangria and Decadent Saint Fire or Ice Sangria are crafted with a red or white wine base, real fruit and spices.
“If you go to a liquor store, you’re going to be hard pressed to find anything with real fruit in it. It’s all made with flavorings,” Hasler says.
And because they are 20.5 percent alcohol, they stay fresh for four to six months after opening without refrigeration. Preserved by the high alcohol and vitamin C content from fruit juices, these products are crafted without any artificial or “natural” flavorings. One bottle of either sangria diluted with seltzer, water or champagne produces three to four bottles. Decadent Saint Fire or Ice Sangria can also be served as a hot, spiced drink during the winter season. According to their research, no other producer is creating unfiltered sangria made with only real fruit. Side note: Due to the high vitamin C content and antioxidants, the sangria claims to lessen the risk of a hangover.
“There really isn’t anything else like it in the marketplace right now,” Hasler says.
What We Love’s motto of “love and innovation” that carries through to the wines will continue on with two new products slated for release later this year as the company goes national. The tasting room is open to the public Thursdays – Sundays (1 p.m. – 6 p.m.) at The Winery and bottles are available at most major liquor stores in Boulder and Denver. In fact, if you can’t find it your favorite store, let the manager and The Winery know. If they get the liquor store or restaurant to carry it, The Winery will send you three free bottles.
